Healthy (yummy) Pizza Does Exist




I was Paelo(ish) for 2 years. I say "ish" because I still dabbled in sugar, but was completely gluten, dairy and grain free. As a result, I became quite the little chef. The lifestyle made me very creative with what I was able to eat. However, one thing that I missed every day was PIZZA. I'm not gonna lie, it's my fave food. So here it is: my paleo(ish) pizza recipe, packed with veggies and all natural ingredients. This pizza is completely gluten. dairy and grain free, but does contain sugar. If you're considering a "diet" or new way of eating, I highly recommend trying the Paleo diet. It's honestly not that bad. I still was able to eat bacon and potatos. What's so bad about that?!


Ingredients:

Cauliflower Crust: 480 calories (whole pie)

Spinach: 1 bag of spinach. Don't be lazy, wash it!

Peppers: 1 whole chopped green pepper

Onion: Half a red onion chopped

Mushrooms: 1 cup of mushrooms

Whatever other veggies you want, throw them in there!

Almond Milk Cheese: 3/4 of a bag. I promise this is some good fake cheese!

Turkey Pepperoni: Approx. 20 slices. I may or may not have eaten a few slices while I was placing them on the pizza. Guilty!

Tomato Sauce: 12-16oz


Nutrition:

1 whole pie = 1100 calories

2 servings = 550 calories

The first time I made this, it took all my willpower to NOT eat the whole thing.


How to


The crust


1 Throw the crust in the oven first without the toppings - The time & temp will depend on where you get the crust. For the TD's one I recommend, it's 450 for about 10 minutes or so. How crispy do you like it?! Disclaimer: If you're drinking wine while cooking, set a timer. You'll thank me later.

2. Once the crust is out of the oven, throw in the sauce, veggies, cheese and pepperoni, and pop it back in the oven for 15 minutes, or until the cheese bubbles.


The veggies

  1. Chop up the onion and green pepper and throw in a skillet with a tablespoon of olive oil.

  2. After a couple minutes, throw in the spinach and mushrooms.

  3. Once the spinach cooks down, add half a squeezed lemon and 1/2 of tsp of salt

Does anyone hate chopping up veggies? Try this guy out. I have 3 of them!


Throwing it all together

  1. Add the sauce to the crust

  2. Add the almond cheese

  3. Add the veggies

  4. Add the turkey pepperoni

  5. Place in the oven on 450 for 15-20 mins or until the cheese bubbles

  6. Take out of the oven and let cool for 10-min (if you can wait!)

  7. Cut it up how you like. 1 slice (cut into 4 pieces) is approx. 275 calories
